A Cannes veteran, the 70-year-old has played in nine films that were screened at the French festival in previous years, including Andrzej Wajda's 'Ashes' and Krzysztof Zanussi's 'Family Life'.
The Cinéfondation section takes in 18 works made by students at film schools (including 4 animated films), culled from 1,600 submissions.
Olbrychski will also be scrutinising 9 works in the short film section.
His fellow jurors are Lebanese film director Joana Hadjithomas, Belgian actress Cécile de France, French film director Rebecca Zlotowski, while the chairman is Mauritanian director Abderrahmane Sissako.
Meanwhile, in the main competition, 19 movies are in the running for the Palme d'Or, with a jury presided over by cult US pair the Coen brothers.
The 68th Cannes Film Festival ends on 24 May. (nh)
